it’s recognising the black umbrella as a person. Is there a way to exclude just the umbrella?

When you’re watching the video do you have the option to Mark it? It will be logged as a false positive and when the camera detects it again it will not notify you or record.
If that option is not available then you may possibly be able to put a privacy zone on the umbrella. That will block it from the camera view.

It’s a setting thing. You can actually choose different level of sensitivity of the motion sensingbin your Eufy Security app. Google that.
