That sucks, at least you got video footage of it so you can show the authorities and claim it as stolen from where you purchased it.
Also, set the camera so it records a bit longer.

If this is a normal, recurring thing I would ask Amazon and all your carriers to deliver by hand vs. just leaving it there.
If you notice the same person doing it you can set them up with an Apple AirTag. Call local non emergency law enforcement and see if you can set a honeypot.
